YUM! Just chop spinach, chard, kale, basil or some sort of similar combination. Saute with a tiny bit of olive oil, a dash of salt. Add feta. Crack the eggs over the top of the veggies, working the egg whites away from the yoke, the trick is getting the yokes to stay whole so that when they do break, their contents stay moist over the scrambled goodness!
